Celebrate National Picnic Week with Pudology
It’s officially summer, and what better way to celebrate than by plonking yourself on a blanket in the park with a big picnic basket of goodies. It’s the perfect accompaniment to an afternoon of tennis and cricket and the…well, watching others play is a sport, right?
And if the sporadic sunshine isn’t enough to persuade you – how about the fact that it’s National Picnic Week until the 25th June! Yes! You have an entire week to feel totally guiltless as you tuck into lots of delicious snacks and drink lots of delicious Pimms.
If we’ve done enough to tempt you, then get yourself prepared with ‘Pudology’s Pamphlet of Provisions for the Perfect Picnic’. Ok, it’s just a guide to the best free-from picnic classics we know of, but it’s going to be very valuable if you manage to snag a sunny afternoon out of the office.
We have tried and tested all of the delicious options we list here, and carefully selected our favourites. Whether it’s a romantic picnic or a family feast, we have you covered…
Simple to make free from whatever you like! Our favourite way is to top thin-sliced, wholemeal bread (gluten-free if you’d prefer) with a plant-based spread. Thinly slice your cucumber and arrange your sandwiches. Remove the crusts if you’re feeling frivolous, and cut into triangles. For a Mediterranean twist, swap the vegan spread for hummus.
Strawberries and Cream
Whether you pick your strawberries yourself from a fruit farm (do it, it’s so much fun) or pick them up from a supermarket, there are few pleasures more summery than topping them with cold cream. Dairy free? Don’t sweat it, Alpro do a wonderful vegan ’cream’ alternative (available at Ocado and Waitrose). Healthy twist? Slather the berries in Pudolgoy’s coconut yoghurt for a fresh, high-protein snack.
Pork Pies and Sausage rolls
A picnic is not a picnic without pastry. Fortunately, Veg Out do a wonderful vegan ‘sausage’ roll and ‘pork’ pie that taste just wonderful. The pastry is crisp and fresh, while the fillings are perfectly seasoned to resemble their meaty counterparts. We recommend spreading a slice of the pork pie with apple sauce, and warming the sausage roll in the oven to crisp the pastry up even further! (Don’t forget to give it time to cool before packing in you picnic basket.)
Pate is undoubtedly one of the most decadent picnic foods. If you prefer to avoid consuming meat in your diet, then don’t miss out – Ocado have you sorted! They stock a vegan pate by a brand called Liberto, made from a blend of chickpeas and kidney beans for a much healthier alternative! It tastes heavenly spread thickly on toast, and goes down a treat with an icy G&T.
And if the delicious options above haven’t got you desperate to pack a bag and go munching in the sun, check out the recipe below! We put this one together ourselves and think that a sweet treat like this would go down very well after the savoury offerings above. Let us know if you give it a try!
