Key Lime Pie recipe from Pudology Fan Trixie

Our lovely friend Trixie has kindly sent us this recipe for Key Lime Pie.

At the moment it’s not dairy-free but is gluten-free.

The recipe:

Grab a small flan dish.

For the base: 8oz choc digestives (which is roughly a packet). Tesco and Sainsbury’s do gluten-free biscuits.
3oz butter.

Crush the biscuits and melt the butter.

Combine then put in your flan dish and allow to set in the fridge for approximately 15 minutes.


For the topping:

300ml extra thick double cream
Zest and juice of 3 limes
1 can condensed milk.

Combine all three ingredients and place on the hardened base.

Put in fridge for approximately half an hour, or until needed.

When serving, push the pie out of flan base and finish with some chocolate shavings or curls – yummy!
