Pudology & National Vegetarian Week 2017…!
National Vegetarian Week runs from 15th – 19th May this year, bringing attention to the wonderful meat-free lifestyle that many of our Pudology fans follow.
To celebrate, we have put together a list of our favourite veggie dessert recipes that we have been loving over on Pinterest! These also happen to be dairy and gluten-free for those who were wondering, so take a look and start baking!
Sweet Paul’s Coconut Rice Pudding with Mango and Thai Basil
1 can coconut milk
2 cups whole milk (or soya for dairy-free)
1 1/3 cup white Basmati rice
1/3 cup sugar
2 mangoes, peeled and chopped
1 lime, zest and juice
1 tbsp sugar
Handful of Thai Basil
Method – Heat the coconut and (soya) milk until just below boiling. Add the rice and simmer for 25 minutes until the rice is tender and the pudding thickened. Remove from the heat and stir in the sugar. Leave to cool before chilling for 4 hours in the fridge. Before serving, mix the mangoes, lime zest, juice and sugar in a bowl. Finely chop the basil and add to the mix. Leave to rest for 15 minutes. Serve the rice pudding with the fruit mix.
Pudology Twist: Add a dollop of our coconut yoghurt for an extra healthy serving, or mix through for extra creaminess.
WonkyWonderful’s Chocolate and Peanut Butter Dairy-Free Popsicles
½ cup peanut butter
2 tbsp cocoa powder
3 tbsp cornstarch
1.5 cups almond milk
½ cup white sugar
Method – Whisk 1 cup of almond milk and peanut butter together in a pan over a medium heat. Add half the sugar and 2 tbsp cornstarch and continue to whisk for 5 minutes until smooth. Transfer to container and refrigerate. In another pan, combine ½ cup of the almond milk, cocoa powder, the rest of the sugar and 1 tbsp cornstarch and whisk over a medium heat for 5 minutes until smooth. Remove from heat, transfer to container and refrigerate for 30 minutes.
Fill Popsicle maker with the peanut butter mixture, then the chocolate mixture so each Popsicle is an even mix of the two. Gently swirl together with a spoon or toothpick. Freeze for at least one hour before serving.
Pudology Twist: Melt one of our chocolate puds into the chocolate mixture for an even more indulgent fix!!
Bloglovin’s 3 ingredient chocolate fudge bites:
3 cups chocolate chips
¾ cup full-fat coconut milk
2 tbsp coconut oil
Method – combine the coconut milk and oil in a pan and bring to the boil. Pour over the chocolate chips and let sit for 2 minutes. Whisk until smooth. Line a muffin tin with cake cases and fill with the chocolate mixture. Freeze for one hour or refrigerate for 2-3 hours.
Pudology Twist: Substitute one cup of chocolate chips for two pots of our Chocolate Orange Pud for a subtle zing that will leave your mouth watering!
