We’ve included our ingredients below, but feel free to substitute the toppings if there is something you’d prefer.
To make it gluten free, swap the flour for a blend of roughly half buckwheat flour and half rice flour.
Yield: 1 pizza
Prep time: 20 minutes
Cooking time: 15 minutes
Ingredients:
For the base
300g plain flour
2 tsp baking powder
Pinch salt
2 tbsp oil
150ml-200ml water
For the sauce
½ leek
1 tbsp oil or water
200ml passata
150g vegan mince
1 tbsp tomato puree
1 tbsp Italian herbs
1 tbsp vegan Worcester sauce
Salt
For the topping
150g vegan cheese
1 mushroom
½ pepper
75g sweetcorn
¼ red onion
Method:
To make the base, mix together the flour, baking powder and salt. Stir in the oil and water and mix until the texture resembles a dough (this should not be sticky). Knead the dough for 5 minutes on a floured surface. Roll the dough into the desired shape and place on a pizza tray. Cook the dough for 5-10 minutes until slightly browned – do not overcook as this will be going back into the oven.
Make the sauce while the dough is cooking.
